What to Eat When You are Gluten Sensitive

So, I am still very new to this whole gluten free diet thing.  Like a lot of people, I am sure, there are good days and there are bad days.
This week has been pretty easy because of being sick.  But when I was training for my run daily, I could eat everything in sight, for the hunger was terrible.  Those were bad days.  I felt like I was starving and then I would do it....I would eat a big 'ole nasty cheeseburger or something.  So not only was I filling up my tank with grease, but I was inhaling gluten like no tomorrow.
Like I said, bad days.
Those were terrible episodes full of terrible consequences for my reckless actions.  If you are gluten intolerant, you know what I mean.

Today, because I don't know what else to post, I will fill you in on my food intake.
B-fast:  Cup of coffee with cream and sugar
2 hard boiled eggs (no salt)
            grapes
            10 almonds

Lunch:  turkey, cucumber slices, tomato wrapped in lettuce leaves X's 2
            more grapes

Snack:  broke down and ate a couple of cookies (homemade of course)

Supper:  Crock Pot roast beef with mashed potatoes, side of peas, and fresh garden tomatoes
              cup of milk

Not too bad.  I did have a little tummy issue from the cookies, but bearable :)
