Last Night's Quick Healthy Supper

Home made Split Pea Soup

Chop  6 slices of bacon up into bits
-brown them in your soup pot, take out bacon when done and set on paper towel
 leave grease in the pot

Throw into your pot (medium heat)
- One chopped up onion
-Three chopped carrots
-Two chopped celery
-Two peeled and diced potatoes
-Two cloves of garlic minced
Now add one box  of liquid chicken stock  (I use Costco's organic chicken broth)

Add- One cup of split peas

Boil all ingredients for 15-20 min. and cook on low until you're ready to eat
Salt and Pepper soup to taste
Dish up in bowls, throw bacon bits on for garnish....enjoy!
