B-fast

Here's the leftover breakfast we served up today.
With only one chunk of ham left and five people to feed, it is an interesting proposition to make sure everyone enjoys a taste of that yummy, salty meat.

Frittatta for five

Use a nonstick pan
dice up a 1/4 cup of onion and one tsp. of garlic
saute in pan with butter until onion is clear
while onion cooks dice up those three leftover asparagus spears that went unnoticed over the holiday
dice up your tiny piece of leftover ham
throw all in the pan with the onions and garlic
Beat five eggs and pour in pan
top with cheddar cheese
put a lid on it and cook on low to medium until eggs are firm
pull pan from heat and let sit for a couple of minutes
put a plate on top of pan and flip the pan over, your egg dish should pop right out (if not, you didn't use enough butter:)
Cut up like a pizza and serve with toast and juice.
My husband loved this and it will be a new "go to" recipe when I need to use up stuff in the fridge.
