Vegas trip

We are going to Vegas baby!
John has a lot of C.E. to catch up on and fast, so we got on-line to find a big conference and we found one in Vegas.  We are excited to go and yet a little apprehensive.  I will be on my own with a baby during his meetings and then we will be looking for family friendly things to do during his down time.
Has anyone ever been there?  Any suggestions for things to do that aren't associated with dancing girls and gambling? 
We saw a fun looking theme park thingy on the web and thought that it might be interesting...
