What's for Supper?

If you are like me, I tend to wait until 4:00 or so to start thinking about supper. Then it is a race to think of something yummy and good for my family that I can cook in twenty minutes or less.
The sad thing is, is that there are not very many nutritionally sound things that you can make for supper in that short amount of time.  This is why boxed dinners and cans are so popular in our culture.

This morning, I took note of our day.
We have a slower morning and then by noon we are going to be busy!
Today is pay day for my husband and our bank is over the mountain in the next town.  So, after lunch we will drive over the pass go to the bank, go to the big box store for our produce, go to another box store for our smaller items and then drive home.  I usually get home around 4:30  and we have to turn around and leave at 5:40 to get the girls to their Awana program 25 min. away down another mountain valley.  So, what's for supper?

Hamburger Soup!
brown hamburger and throw in a crock pot
dice onion, 2-3 garlic cloves, celery, carrots throw in pot
3 tbl. spoons of beef stock
4 cups of water
I am using frozen garden tomatoes, but you can use canned if you like
a handful of wild rice
can of favorite beans,  your choice
salt, pepper and your favorite soup herb, I will use basil and thyme
(secret ingredient) heaping tablespoon of brown sugar
you can add more veggies if you like, it's your soup!
let it stew on low all day!

Serve with a dollop of sour cream and some shredded cheddar cheese

  1. Thanks Carrie! I'm on it. I have been doing the same processing this a.m. I was thinking of deer stew. I am making your recipe with minced up deer meat since I do not have HB.

    I almost used some elk, but already had hamburger thawed out. We used half the package last night to make tacos. I am glad you read my blog. I will tell the girls G L misses them. :)
